We are lucky enough to enjoy Hermiston watermelons here in Oregon, which are grown near the Columbia River and find their way to local markets every August. The eastern part of our state has hot, dry summers, perfect for growing succulent, delicious melons. Felix decided to make some sorbet with one of these beautiful watermelons, and it couldn’t be easier for you to do the same! Watermelon sorbet hits the spot on a hot summer evening. You might find yourself making this again and again after tasting it for the first time. Have fun with this recipe, and give it a try with other summer fruits, like peaches or cantaloupe in place of watermelon. It is so easy to make and it’s always a hit at summer gatherings!

Ingredients

3 lb seedless watermelon (approx. 1 sm melon)
1 c sugar
¼ c corn syrup or simple syrup
¼ c honey
1 lemon, juice of
1 lime, juice of
fresh mint

Instructions

Watermelon Sorbet
Cut off watermelon rind and discard. Cut melon into large chunks and puree in processor/blender.
Watermelon Sorbet
Pass melon puree through fine strainer and set aside.

Watermelon Sorbet
Bring sugar, syrup, honey and citrus juices to a boil in saucepan until dissolved.

Cool to room temp and combine with watermelon puree. Pour into a freezer-safe container with lid and freeze 10-12 hr, until set. Serve with a bit of fresh mint, as desired.
